Black bean & Rice Quesadilla

I love mexican food. I could live on black beans, rice, and tortillas. Mexican is a staple around here, for my husband and I atleast. Jon not so much – he loves tacos, if you could call them that (only meat rolled in a tortilla). Tonight Jack had his first taste of mexican, and he is a baby after my own heart. I wanted to make a fast dinner tonight, So I made these. Normally I would add more to a quesadilla but in addition to a fast meal, I wanted to only cook one! Jack has dietary restrictions. (He’s allergic to dairy) and hasn’t really developed a liking to meat yet. Thus we have the black bean and rice quesadilla. – no meat, no cheese. just seasoned black beans, and mexican style rice



They were yummy, despite having so few ingredients. I simply buttered one side of a tortilla ( I used earth balance on Jack’s. – no dairy!) and added the cooked black beans, and mexican rice to one half of the tortilla. folded it over to close it and Pinched the sides together. Like when you cover a pie with dough. It should look like somewhat like a calzone when closed. Popped them onto our electric skillet and waited til they were golden brown. Let em cool for a few minutes and cut em up. I dipped mine in a little sour cream, and these could be really fast, yummy appetizers.

If I were making these for my husband and I I would do it a little differently. I would still make these for Jack he really did enjoy them – especially the black beans. need proof? Just look at this face




These would be delicious with a little shredded seasoned chicken (or whatever meat you choose) a little bit of cheese. Some tomato, onion if you like. With a side or two of sour cream and guacamole for dipping.
